Fried Chinese Noodles



This is really easy to dish up with only a few ingredients . It wasn't oily and the noodles was cooked just right - not soggy at all.
 
 
Ingredients
1 packet of Kang Kang brand Hokkien noodles (from Fairprice Supermaket)
3 - 4 shallots sliced
6 fish balls sliced ( I used Dodo brand)
Some sliced meat - marinated in soy sauce
1 egg
A handful of bean sprouts
Chye Sim cut to short lengths
Oil
Bowl of water
Soy sauce
Oyster sauce

Method
Prepare the ingredients.
Fry the egg n set aside. You can beat the egg with some soy sauce.
Heat the wok with oil n fry shallots till brownish add in the meat n fish balls.
Fry till meat turns nearly cooked.
Add in 1 packet of noodles separate them quickly with tongs or chopstick .
Add in 2 tablespoon of oyster sauce.
Add in the bowl of water too.
Fry at medium heat stirring about 2 minutes.
Add in the vegetables n bean sprouts.
Fry till veggies are cooked.
Serve the noodles and top with cut strips of egg.
 
You can also garnish with some cut chilli and top with more fried shallots.
This will make about 3 plates of noodles for adults - small eaters that is.
 
Ingredients used

Fry the egg to cut into strips

Pan fry the shallots till brownish 


Adding in the oyster sauce n bowl of water with the noodles

Fry till vegetables cooked

Serve with egg strips

Fun with ice

Today I won't write about cooking but fun time with my daughter at 2 degree ice art exhibition at Marina Bay Sands.


The place is really cold!! -15 degree to be exact!

I think it is better to rent the coats there at $5 a piece but try to wear layered clothes before entering. 

Make sure the shoes n socks are on too!


The ice sculptures consisted of world landmarks.

It was fun to play in there n it was a good experience.

Potato Soup

Tasty n easy to make potato soup



Peel 2 large russet potatoes n cut into even slices not too thick.
Slice one onion. 
Cut some brown mushrooms. 
Boil about 2 cups of water. 
Fry n chop some back bacon. 
Cut up spring onions. 
Brown butter 40gm slightly n add in the onions. Fry till a bit soft. 
Add on the mushroom n potato slices n fry till a bit translucent . 
Throw in a tablespoon of flour n stir fry . Add in 2 cups of boiling water n sprinkle some salt n dried parsley n black pepper.
Boil about 5 minutes add in 1/2 cup milk n boil about 20 minutes. 
Use your wooden spoon to break the potatoes a bit. 
Add in some grated cheese n stir. 
Serve with chopped bacon n spring onions.

Add in milk n boil for another 20 mins or till thickened

Spiced Apple Cranberry Muffins

This recipe comes from Cooks.com submitted by Belle.

I like this fruity muffin a lot.

Recipe as follows :
2 cups of flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 teaspoon salt
1 tsp cinnamon
1/4 tsp ground ginger  (I omitted)
1/4 cup brown sugar, packed
1 large egg, beaten
1/2 cup milk
1/4 cup molasses ( I replaced with honey)
1/4 cup veg oil
1 cup finely chopped spiced apple - I just used a red apple
3/4 cup sweetened dried cranberries

Preheat oven to 180 Celcius

Soak the cranberries in hot water for 15 minutes.
In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon and ginger.
Stir until well mixed and no streaks remain.
Make a well in the center of mixture.

In a bowl, mix together the brown sugar, egg, milk, molasses (honey) and oil. Add to the dry ingredients, stirring until just moistened.
Fold in the apples and soaked cranberries.

Spoon batter into buttered or paper lined muffin pans, filling 2/3 full.

Bake for 16 minutes or until golden and a wooden toothpick inserted in center of a cupcake comes out nearly clean.

Remove muffins from pan and cool on a wire rack.

Yields 9 muffins but I made 12.

Rice Cooker Chicken



This is amazing! Never knew I could steam chicken so effortlessly! Recipe from video shared by friends on facebook.

电饭煲焗鸡

材料:
1. 雞 1隻 (大概1.3公斤重)
2. 幼鹽 1 1/2湯匙
3. 葱 400 克 (切半)...
4. 乾葱 6 粒 (切片)
5. 紹興酒 400 毫升

做法:
1. 雞身及雞腔擦上幼鹽。 於較厚肉的地方,擦上較多的鹽。
2. 將葱平放於電飯煲底部,再加入乾葱,將雞放面,淋上紹興酒。
3. 以電飯煲煮40分鐘,切件即可食用。

小貼士:
可與薑蓉一起食用。
 
English Recipe
 
1. 1 whole chicken roughly weight 1.3 kg  - I bought mine from the wet market - $8.50
2. Fine salt 1.5 tablespoon
3. Spring Onion 400 g that will be 4 packets from NTUC -$2.80.Can cut the spring onions into half.
4. Small red onions 6 pcs. Skin removed and sliced.
5. Shao Xing Wine 400 ml - in my opinion can reduce to 300ml. 1 bottle of shao xing wine 600ml costs $3.60.
 
Method
1. Rub the external and internal of chicken with salt. Rubbing longer at the meatier parts.
2. Place the spring onions on the bottom of rice cooker.  Add in the small red onions. Place chicken on top. Pour the shao xing wine on the chicken.
3. Cook for 40 minutes. Discard the spring onions and small onions. Cut and serve.
 
I recommend to flip the chicken over at 30 minutes and "colour" the other side of the chicken.
I used the full cycle of the rice cooker. The meat is still tender.
I also added some gouqizi to the chicken when cooking.
The stock is very strong flavoured, I have added 2 cups of water to dilute and boil it to become soup.
