Easy buttered toasts and scrambled cheesy eggs


Easy to whip up scrambled eggs and grilled toast 

For the bread, use sandwich loaf bread. 
Spread some margarine or butter on one side. 
Heat a small grill pan over small fire. 
Place the buttered side face down.
Wait about 2 mins. Then flip the bread over n grill for about 30 seconds. 

I bought the pan from cold storage for $7.90.
You can also use it to grill chicken breast or salmon.

For one serving, beat 2 eggs with 1 teaspoon of milk n some black pepper n a pinch of salt and whisk till a uniform pale yellow colour. 

Then I also added a small handful of pizza plus shredded cheese n beat again.

On a medium pan melt 2 teaspoon of unsalted butter n swirl around to cover the pan on medium heat.

Pour in the eggs, when the eggs start to set slightly around the edge of pan, quickly use your spatula n start mixing the eggs up n push towards you.

When the eggs appear dry, remove n serve.

Japanese style half boiled eggs


I learnt how to do this after watching a Japanese man cook them on youtube. 

1. Use room temperature eggs.
2. Boil a pot of water - enough to cover the eggs.
3. Lower the temp till water just simmering.
4. Set your timer to 6 minutes 
5. Add in the eggs 
6. Prepare a large bowl of iced  water.
7. Remove eggs from boiling water n place in iced water- this step helps to stop eggs cooking further. 
8. When cool to handle , roll each egg before peeling the shells.
9. Cut into halves. Serve with sprinkled salt n pepper if desired.

Cook the eggs 6 minutes

Cool in ice water 

Roll eggs n peel the shell

Smooth eggs

Cut into half

Ready to serve

Tofu Porridge


Cooked this aromatic porridge with 30 minutes - simple healthy porridge to nurse a bad stomach.

Ingredients 
1/2 cup of rice
2 stalks spring onion
1/2 box of tofu cut to smaller squares
Sprinkle of salt
A teaspoon of Kikkoman soy sauce
2 large bowls of water
1 pc of imitation crab stick (optional)

Rinse your rice n add in the water.
On medium fire on stove top.
Cook the porridge till water boils n stirring with ladle occasionally. Do not cover pot!
At about 15 minutes grains will start to soften a little.
Turn fire to low n sprinkle some salt.
Boil another 10 minutes and add in crabstick n tofu and soy sauce.Do not stir or tofu will break.
After 5 minutes ladle into bowl n serve with chopped green spring onions.
You may add a dash of white pepper too.

Before boiling

About 15 minutes turn heat to low n add in salt.

Add in tofu n crabstick n soy sauce.

With soy sauce slightly brown colour

Delicious porridge ready!

Baked Cheesecake with Blueberries



This cheesecake is made upon request from my daughter when she was reading her Geronimo Stilton - The Quest for Paradise book. There in the middle if the book was a cheesecake recipe! Actually not surprised because cheese is a mouse favourite food!

Here is the original recipe 




I have reduced and replaced the ingredients

My recipe
For the crust
2 cups of Mcvities biscuit crumbs finely ground 
4 tablespoons caster sugar
125 gm unsalted butter melted 

For The Cake
3 packages of Kraft Cream Cheese , softened 
1and 1/2 cup caster sugar
4 eggs 
1 tablespoon vanilla 

For The Topping
5 tablespoon caster sugar
1 tub of light sour cream
1 teaspoon vanilla 
1 punnet of blueberries

Preheat the oven to 180C. 
Crush the Mcvities till fine . You can crush them inside a plastic bag using the back of the measuring cup or a rolling pin.
Add the melted butter n sugar. Mix well.
Pour into a 9 inch springform pan n press it into the bottom of the pan. 
Bake the crust for 10 minutes.
Remove from pan n set aside to cool.







Using a electric beater , beat the cream cheese, eggs, sugar n vanilla. 
Pour all the mixture into the pan.
Bake at 180 C on the middle tray, fan on, upper n lower heat for 60 mins. Then turn to 160C n bake another 15 mins.
The center is firm to the touch. 
Remove the cake from oven n let it cool on rack.

Use a bowl n combine sugar, sour cream n vanilla for topping. Use a hand whisk.
After the cheesecake cooled for about 10 minutes, spread over the top.
Place the blueberries.
Return to oven to make an additional 10 minutes or until topping is set.
Chill in the fridge for 2 hours until cake is set.
